Fresh Boards are obtained by placing a Log on a Sawbuck and using a Saw to Make Boards by right clicking on the loaded Sawbuck. A fresh Log will produce 30 boards. A Coffin Plank will sometimes be created rather than a Fresh Board. Be careful to set it aside right away so you don't use it as a board.

A Timber Pile must be built to turn Fresh Boards to Dry Boards and from there into Planed Boards or Oiled Boards.

Any Recipe that uses a Board can also use a Fresh Board.
