There are 4 different varieties of Potato which can be produced from a Field. The variety you get depends on the total accumulated influence of the Blue and the Pink bars. Growing Potatoes adds to the Red bar.

Potato	Influence
Brown Potato	Total accumulated Influence is less than 100
Blue Potato	100 to 150 total Influence, but with more Blue then Pink.
Yellow Potato	100 to 150 total Influence, but with more Pink then Blue.
Red Potato	150+ total Influence, balance does not matter.

Potato can be Baked in a Stove to get a Baked Potato or Boiled in a Clay Pot or Copper Pot to get a Boiled Potato.
