Rabbits are an oddity in that when butchering them the pelt is automatically gathered and thus no skinning is required. (Not the case after the lest beta patch?)
The pelts can be sold in Boston for the same price as deer pelts.
Rabbits make an excellent source of meat and hides for weaker players.
They're easily killed (1-3 stomps) and tend not to fight back much.
