A boulder differs not just in size and shape, but also in composition. Granite Excavation allows for the unearthing of Granite Boulders from stone quarries.
About
Once the Quarrying Skill has be learned you can 
Dig 
Stone Boulders from a 
Quarry or 
Mountain. With the Granite Excavation Skill learned there is a chance to get a 
Granite Boulders instead when Digging on Quarries. This chance is based off your Mines & Mountains Proficiency.
