To make a fence, build a start/corner post, then right-click on the post to build in a cardinal direction.
To build a gate, leave a 2 square gap between two start/corner posts and right-click on a post to enable the gate option.

Tips

• You can build a starter cornerpost with only one tile flattened, but you have to match it exactly to the tile. You can use shift + mouse wheel for easier matching.
• If you don't place the starter post exactly on the tile (it means snap to grid not placing it free with Ctrl) then you can't build a door at the end even if you have 2 tiles space between 2 Cornerposts!
• You will need at least 90-100 phlegm to destroy a segment of a stone hedge, although it will take about 15 hits for each 1% damage. It is possible to destroy with lower humors (and more quickly) if your character is the owner of a Stake Claim covering the fence.
